Greek Style Lentil Soup

  • 250 grams brown lentils
  • olive oil
  • 500 ml tomatoe paste
  • 1 whole onion
  • 2-3 whole bay leaves
  • 2-3 cloves garlic
  • salt and pepper to taste
  • feta cheese and pickled olives for garnish

I got this delicious Greek Style Lentil Soup recepe from my greek aunt who is a first-rate cook. Here is one of her recipes easy to cook but so tasty and suitable in winter. This recipe will make6 servings .

As we all know legumes can cause gas, therefore we put our brown lentils in a pot with cold water and let them soak for a few hours.

We change the water about 2 times.

Then we put about 2l of fresh water in a cooking pot with our lentils. We also put one big onion, you can cut it or put the whole onion. We peel the garlic and put them in , just like the bay leaves ,tomatoe paste and 2 tsp of salt and some pepper.
We put a lid and let it come to a boil.

We turn the temp down a bit and let it simmer until the lentils are soft. About 45 minutes to an hour.
Now before we can serve this yummy soup we put some salt and pepper to taste and put it in a soup bowl or soup dish. Now you put a slice of feta cheese in and a few pickled olives. Ready to enjoy!!!
