Giant white bean soup (Greek style)
Ingredients: for ca. 8 soup plates
Total time: 60 minutes
- 500 grams white giant beans
- 1/4 knob celery
- 1 big carrot
- 1 leek
- 1 clove garlic
- 1 onion
- 500 ml Tomato paste
- 30 ml olive oil
- Salt and Pepper
- White vinegar
- Feta Cheese
Another delicious recipe from my greek aunt it's very common at peloponnesian villages. Mostly for winter month.
These giant white beans should soak in water for a few hours and you have to change the water about 3 times.
They will become more wholesome and you wouldn't have any gas problems.
So after soaking you put about 2l of water in a large cooking pot and throw in your beans. Also put in your veggies and let it boil for 30 mins.
