I would like to share something I learnt. How to make Bahamian Peas n Rice without the rice being wet, soggy, gooey, stickey, or over cooked.
The trick is to cook the rice in the oven and to use parboiled rice . This recipe makes 4 servings or 4 cups of rice. Peas n Rice is easy to make. It is like cooking ordinary white rice - you put the rice in water and cook. When making Bahamian Peas n Rice, however, instead of using pure water you use a seasoned mixture.


Let’s first make the mixture! Get a pyrex bowl you can place in the oven. Put 2 and a half (2 1/2) cups water and half (1/2) a cup of coconut milk in the pyrex.
Add 1 tablespoon kitchen bouquet (browning) , 1 tablespoon tomato paste and 1 tablespoon salt . Chop quarter (1/4) onion and half bell (green) pepper as finely as you can . Place into mixture, and stir until the mixture is evenly brown and the tomato paste has dissolved.

Add 2 cups of parboiled rice to the mixture


and stir until all the rice is under the liquid.

Put pyrex in the oven and set to the highest heat (approximately 425 F).
Cook for 40 minutes.

After 40 minutes, use a fork to see if all the liquid has been absorbed by rice and put half cup of pre-cooked peas and stir.
